On March 26, 12 members of the singles club enjoyed lunch at Regions Restaurant located on the Estrella Mountain Community College (EMCC) campus. As part of the curriculum of the Culinary Institute, students must prepare and serve each week a different three-course meal offering soup/salad, choice of main entrée, dessert, and a selection of beverages.
On April 9, 25 members and friends enjoyed the culinary department’s newly offered “French Cuisine Menu.” The first course started with the ever famous mouthwatering French onion soup, homemade bread, and Lyonnaise salad topped with bacon and a poached egg, the main entrees were veal poelee with vegetables and rice. The group favorite was Confit de canard (duck quarters), vegetables and rice, and out–of–this–world sauces. Dessert was biscuit de savole (light sponge cake with a hint of orange and berries with cream).
The menus are created by Chef Joseph D. Kalfus, who has extensive culinary and hospitality experience. He joined EMCC in 2021 as the director of the culinary department. The menus are prepared and served by the culinary students with Chef Joseph acting only in an advisory capacity. Regions is open to the public at 11 a.m. each Thursday at a fee of $15. It is a great experience not only for the diners but for the students as well. Regions Restaurant luncheons for the winter semester will continue every Thursday through May 7. The summer dining schedule is yet to be announced.
