Irish American Club’s Emerald Ball

It has been a long tradition of the PebbleCreek (PC) Irish American Club to host the Emerald Ball on St. Patrick’s Day. It is an elegant gala that many people look forward to attending each year. This year was no exception as 260 tickets were sold! However, on March 13, our HOA closed all of our facilities, including the clubhouse and the food and beverage department due to the coronavirus pandemic. We as a Club supported that decision for all of our protection and welfare.

Our guests would have enjoyed appetizers including shrimp cocktail, Prosciutto wrapped melon and Prosciutto wrapped asparagus, and beef crostini served in the Chianti room while our harpist, Emma Quinn serenaded us. After the cocktail hour, we were to move to the elegantly decorated Tuscany Falls Ballroom to enjoy either Roasted Apple and Bacon Stuffed Chicken with Irish Whiskey cream sauce or Grilled Salmon served with a butter lemon caper sauce. Each entrée included an Irish Flag Salad, rolls and soda bread, Colcannon potatoes, roasted asparagus, and a dessert. A bottle of Merlot and Chardonnay were to be placed on each table.

The tables were to have black tablecloths, black napkins on gold chargers and hurricanes filled with green and gold glitter balls of varying sizes in the center of each table on a round mirror surrounded by three votive holders with LED candles. Our harpist was to continue playing through our dinner and the talented band, Rhythm Edition, would have been on stage playing their fabulous music for the rest of the evening.

There were going to be additional surprises, but those will remain secret until our 2021 Emerald Ball. With the joint efforts of Suzanne Rambach and Coy and Cheryl Baugh, a letter from Steve Kunkle, our Club’s president, and a refund check was mailed on March 20 to each paid attendee.

We were all looking forward to this event and we want to thank the Emerald Ball committee for all of their hard work: Suzanne Rambach (chair), Donna Gillen (co-chair), and Mary Hornacek.  We don’t know what the future will bring, but we hope we can come together as a Club soon. In the meantime, remain safe and healthy.
